Cranberry almond biscotti are the sweet snack which is usually made for holiday events, especially Christmas. These snacks are often called as Christmas cookies. We also could be nice snacks for the coffee and tea. This backing snack can be made in gluten free or low carb. This kind of food can be enjoyed with chocolate dipped.

To make these Biscotti, we will need flour, white sugar, baking powder and baking soda. We also will need 2 egg whites and 2 whole eggs. For the additional, it could need vanilla extract or almond extract, almond nuts, and sweetened dried cranberries.
What we have to do
First we need to preheat oven to 170 degrees Celsius. We need to combine flour, sugar, baking powder, and baking soda in the medium bowl. Then, we need to whisk the egg whites, whole eggs, and vanilla or almond extract in the separate bowl. After that, we add the egg mixture to the dry ingredients and mix them until moist. We should use an electric mixer on the medium speed when we mix them. Then, we fold in almonds and dried cranberries. Next, on the floured surface, we divide the dough into two parts. Then, we pat each half into a log about 12 inches long and 1.5 inches thick. The last, we put the logs on a baking sheet.
We bake the dough for 30 minutes or until it becomes firm. We could cool it on a wire rack for about 10 minutes. We also could wait until it could enough to handle. Then, we use a serrated knife, slice logs diagonally into half-inch thick pieces. Then, we place the biscotti back on the baking sheet and give space for each one inch. The oven temperature needs to reduce to 150 degrees Celsius and bake for 20 minutes and it will toast and crispy.
